A Warm and Nourishing Pot of Soup

Nothing warms quite like a bowl of homemade soup. Soups are nourishing and often easy and economical to prepare. Here’s the pot of soup I made today…

Tomato & Dandelion Green Soup

INGREDIENTS:

  • (2) T organic unsalted butter or ghee (about $.50)
  • (3) T organic quinoa (about $.75)
  • (1) large bunch organic dandelion greens (about $3)
  • (1) large organic yellow onion (about $.80)
  • (1) small bunch organic celery (about $1.25)
  • (2) T minced organic garlic (about $.90)
  • 6-8 C boiling water
  • (1) 18oz. jar of organic diced tomatoes (about $3)
  • (2) medium organic redskin potatoes (about $1)
  • 1/2 tsp cumin seed (about $.20)
  • 1/2 tsp  anise seed (about $.20)
  • juice of (2) organic fresh lemons (about $1.50)
  • salt and pepper to taste (about $.20)

DIRECTIONS:

Chop onion, celery and potato coarsely and place in a pot with the garlic, butter anise and cumin. Heat over med-high to high heat until onions start to get soft and brown a little. Then add the quinoa, salt and pepper and boiling water. Turn down to medium heat. Chop the dandelion greens. Once the potatoes are soft and the quinoa sprouts add the diced tomatoes, greens and lemon juice. Taste and adjust for salt. Once the greens are soft (around 5-7 minutes), the soup is ready to enjoy!

Vegetable or olive oil can be substituted to make this soup vegan. This pot of soup costs roughly $13.30 to cook and makes 6 generous servings. That’s only $2.22 per serving!
